The Cookie Jar: Hazelnut Chocolate Truffles

It’s almost Christmas! With lots of parties, lunches with friends and charities to attend, I like to have something sweet I can take at a moments notice. I’m not a big baker like Linda, but I do love chocolate, so I make lots of Chocolate Truffles! Not only do I love them, but so does everyone else so, let’s add these to The Cookie Jar!!

Hazelnut Chocolate Truffles
3 cups heavy cream
4 1/2 cups semi-sweet chocolate
1 1/2 cup Hazelnut spread
4 Tbs butter
1/2 cup creme de menthe (or orange liqueur)
1 cup chopped Pistachios
1/2 cocoa powder
Chocolate for melting or anything else you want to coat the truffles in

Heat the cream in a sauce pan on medium. Place the chocolate and butter in a microwave safe bowl and heat for 2 minutes, stirring at least once. Add the chocolate to the cream and stir until all the chocolate melts into the cream. Add the liqueur and stir again. Pour the chocolate mixture into a 9 x 11 casserole dish and refrigerate for 3 hours.

Using two teaspoons, scoop out the mixture into little bite size pieces with one spoon and scrape them onto tinfoil or parchment paper with the other spoon. Return them to the refrigerator for another 30 minutes.

Using your palms, roll the balls into little rounds and coat with desired coatings. Delicious!
