French Toast Bread Pudding

French Toast is a favorite breakfast in our house. And we also love a good bread pudding. So I’ve combined the two favorites to make a delicious French Toast Bread Pudding. It’s perfect for a weekend breakfast drizzled with a little syrup or for dessert with a scoop of vanilla ice cream!

French Toast Bread Pudding
1 1/2 loaves Italian hoagie rolls (12″ rolls)
6 tablespoons butter
6 tablespoons brown sugar
5 eggs
2 1/2 cups milk
1 teaspoon vanilla
1/2 teaspoon salt
confectioner’s sugar

Heat oven to 350Β°F. Cut loaves into thick slices. Place in a layer in an 8″ x 8″ casserole dish. Heat butter and brown sugar in a small pan over medium heat until butter melts and brown sugar dissolves. Remove from heat and allow to cool. In a large bowl whisk the eggs, milk, vanilla and salt. Pour half of mixture over the first layer of bread slices. Add a second layer of bread slices. Pour remaining egg mixture on top. Press bread into mixture. Pour brown sugar-butter mixture all over the top. Soak 5 minutes. Place casserole dish in a larger dish that has been filled with an inch of water. Cover with aluminum foil. Bake in the hot oven for 45 minutes. Remove aluminum foil and bake an additional 30 minutes or until bread pudding has set and become puffy. Remove from oven and rest for a few minutes. Dust with confectioner’s sugar.

Cut a slice and plate it…pour on some syrup.
