With the weather getting cold outside, I just wanted some simple comfort food to serve my Honey for lunch. This little dish really hit the mark when he walked in the door and smelled the comforting aroma and was served his personal steaming Shepherd’s Pie.
Simple Shepherd’s Pie
1/2 lb ground beef
1 onion diced
6 Tbs butter
3 Tbs flour
1 can beef consommé
2 large potatoes
1/4 cup chopped flat leaf parsley
1/8 cup chopped chives
1/2 cup cheddar cheese
1/2 cup milk
2 Tbs sour cream
1 salt
1/2 tsp pepper
Heat the oven to 425°F.
Peel, cut and boil the potatoes in generously salted water.
In a separate large skillet, cook the ground beef until browned. Add the onions and cook until the onions are tender. Next add 3 tablespoons of the butter and the flour. Cook for a few minutes then add the consommé. Simmer for 10 minutes more.
When the potatoes are fork tender, drain and mash with parsley, chives, cheddar cheese, 3 tablespoons of butter, milk, sour cream, salt & pepper.
In individual ramekins, (or as I used, 6″ cast iron pans), add about 1 cup of the beef mixture then top with mashed potatoes. Bake in the oven for 15 to 20 minutes.

Yum! Shepherd’s pie is one of my favorite dinners. I usually make two at a time so I can pop one in the freezer.
