Cuban Arroz con Puerco

As you may know by now our family loves a variety of food…we’re not just a ‘meat and potatoes’ family in this house! Last year I shared my Arroz con Pollo recipe that’s well-loved. Today I’m sharing an Arroz con Puerco meal that’s sure to be a new favorite.

Cuban Arroz con Puerco
4 fatty boneless pork chops
extra virgin olive oil
1 teaspoon cumin
1/2 teaspoon dried cilantro
1/2 teaspoon coriander
1 teaspoon salt
1 onion
2 garlic cloves
1/2 red pepper
1 cup long grain rice
15 oz. black beans
2 envelopes Goya chicken bouillon
3 cups water

Cut the pork into cubes. Dice the onion, garlic and red pepper. Heat a little olive oil in a large skillet. Combine the pork, onions, garlic & red pepper, along with the seasonings in the skillet and sauté 8-10 minutes. Add the rice and sauté another minute or two.

Sprinkle the chicken bouillon on the pork mixture. Drain and rinse the beans. Add to the skillet. Add the water; bring to a boil, reduce the heat, cover and simmer 20 minutes.

Scoop into a serving dish…

…and serve nice and hot!
