Pumpkin Walnut Oatmeal

I had some pumpkin purée left over from Wednesday’s Beef & Pumpkin Chili and didn’t want to see it go to waste…what better way to use it up than in a warm & healthy morning bowl of oatmeal for breakfast! The great thing about pumpkin is that the flavor is really very mild and versatile. You can keep it hidden or you can pump it up by adding spices like cinnamon and nutmeg. So have some fun with it!

Pumpkin Walnut Oatmeal
1 cup Old Fashioned Oats
2 cups 1% milk
1/2 cup pumpkin purée
2 tablespoons sugar
1/4 teaspoon cinnamon
dash nutmeg
walnuts & dried cranberries

In a medium saucepan heat the oats, milk, pumpkin purée, sugar, cinnamon and nutmeg until the mixture comes to a boil; reduce heat to low and simmer about five minutes, stirring constantly.

Pour into bowls. Top with walnuts, dried cranberries and a dash of cinnamon & sugar.
