Balsamic Glazed Salmon

While we were in Italy enjoying all those lovely meals at restaurants, one thing that was almost always on the table was a Balsamic Glaze…granted, theirs were in bottles which can be bought in the vinegar aisle of the supermarket and I even have one in my pantry…but for today’s Balsamic Glazed Salmon I went old school and made my own…but I have to say I cheated just a little…I used the microwave! The end result would rival any Italian restaurant…here, try some…

Balsamic Glazed Salmon
2 wild caught fresh salmon fillets
1/2 cup Balsamic vinegar
1/2 tablespoon honey
1/2 tablespoon butter
salt & fresh ground pepper
extra virgin olive oil

Place the Balsamic vinegar, honey and 1/2 teaspoon salt in a microwave-safe bowl. Microwave on high 3 minutes; reducing the vinegar by half. Remove from the microwave and stir in the butter. Season the salmon fillets with a little extra virgin olive oil, salt & pepper.Β Spray a cast iron grill pan with cooking spray and heat on high. Place the salmon fillets in the grill pan and cook on the first side 2-3 minutes; glazing the top of the salmon with some of the Balsamic glaze.

Carefully flip the salmon over and cook another 2-3 minutes; glazing the second side as well. Remove from grill pan and place on a dish. Drizzle with remaining Balsamic glaze and serve with a side salad.

  1. When I first skimmed though this quickly, I thought you microwaved the salmon, lol. GASP! But now I see it is the balsamic glaze you did. I have a quite a bit of wild-caught salmon my husband caught in the freezer, I’ll have to try this!
