The garden is almost done… except for the Brussels sprouts… Anyway, I still had onions, potatoes and peppers to add to my breakfast this morning. On the QT, in college I used to eat corned beef hash out of a can!!! Not any more! Such a yummy breakfast.
Corned Beef Hash With An Egg On Top
4 potatoes, peeled & diced
1 large onion, diced
1 large pepper, diced
1/2 lb corned beef, diced
4 eggs
salt & pepper
In a cast iron skillet heat the butter. Add the potatoes and cook for about 8 minutes covered. Add the onions, peppers and corned beef. Cook an additional 10 minutes. In a separate pan cook 4 eggs sunny side up. Place some Corned Beef Hash on a plate and top with eggs.
