Bacon, Garlic & Spinach Flatbread

Happy Halloween! Before the kiddos head out to trick or treat tonight why not fill their tummies with a quick and easy flatbread that’s both kid and adult friendly and super healthy. Later they can snack on their goodies and you won’t feel any guilt picking out a treat or two from their overabundance!

Bacon, Garlic & Spinach Flatbread
4 thick slices bacon
4 garlic cloves, peeled and sliced thin
4 cups fresh baby spinach leaves
extra virgin olive oil
salt & fresh ground pepper
1 cup ricotta cheese
1/2 cup fresh shredded Asiago cheese
4 flatbread

Heat oven to 450°F. Cook bacon until crisp; drain and crumble. In a medium skillet sauté the garlic slices and baby spinach leaves on medium high heat until spinach has wilted (3-4 minutes); seasoning with salt and pepper as it cooks.

Place the flatbreads on a perforated baking sheet or pizza pan. Spread the ricotta cheese on each flatbread. Divide the sautéed garlic and spinach between the four flatbreads and top with the crumbled bacon and shredded Asiago cheese. Bake in the heated oven 5-7 minutes until cheese melts. Serve immediately.
