This is an excellent, simple and healthy salad…or side dish. I wait until the salad is at room temperature and then add a vinaigrette… next thing you know I’m all done. I love this salad…
Roasted Shaved Brussels Sprout Salad
4 cups Brussels sprouts shaved
1 cup onion, chopped
2 cloves garlic, minced
extra virgin olive oil
salt & pepper
Heat the oven to 400°F. Place the shaved Brussels sprouts on a baking tray, drizzle with a little extra virgin olive oil and season with salt & pepper. Roast for 10-12 minutes until lightly browned.
Heat a tablespoon olive oil in a pan. Add the onions and garlic and cook for 5 minutes. Add the Brussels sprouts and saute until they begin to soften, but still maintain a little bite.
When the Brussels sprouts cool a little, dress with vinaigrette and serve. Delicious!

Heidi – how I would go crazy for a bowl of this. One of my local restaurants has a similar dish as a side but it is so good I have it as an entree – my tip from them would be to also throw in a few toasted walnuts and cover with shaved Parmesan or pecorino!
