Here’s another goodie for The Cookie Jar! Remember Turtle Cookies? My kids have always loved them! We used to make little turtles using the pecans as the flippers…ah…the good old days. This version is a bit more grown up and absolutely scrumptious…

Caramel Turtle Cookies
2 sticks butter, room temperature
1/2 cup sugar
1 cup brown sugar
2 eggs
1 1/2 cups flour
1 teaspoon salt
1 teaspoon baking powder
2 teaspoon vanilla
1/2 cup cocoa
1 cup Old Fashioned Oats
1 cup chopped pecans + whole pecans for garnish
1 cup chocolate chip chunks
caramel fudge topping

Heat the oven to 375°F. In a large bowl, using an electric mixer on medium speed, cream butter and sugars for 2 minutes. Add eggs and beat until creamy. Beat in flour, salt, baking powder, vanilla and cocoa until smooth. With a wooden spoon, stir in oats, chips and pecans. Drop by rounded teaspoons onto a baking sheet. Make an indent in the top of each cookie. Bake in heated oven 10 minutes. Remove from oven; repress the indent and cool cookies slightly. Spoon a little caramel fudge topping into each cookie and top with a whole pecan. Drizzle with a little extra caramel fudge topping.

Caramel Turtle Cookies

Devour while still warm or pop in the fridge to harden the caramel up a bit. Either way they’re delicious!
