This week we are sharing a few of our Fall favorites! I love the warmth and flavor of this delicious soup on a chilly Autumn day…
Pumpkin Apple Soup
1 large can pumpkin puree
2 Granny Smith Apples
1/2 cup dry white wine
1 large sweet onion diced
1 cup chicken stock
1 cup cream
1 salt & pepper
2 Tbs Pumpkin Seed Oil
Toasted pumpkin seeds
In a sauce pot, sauté onions until tender. Peel and dice the apples. Add the apples to the onions and continue cooking for about 8 minutes. Next add the wine and cook for 4 minutes more.
Add the canned pumpkin puree, chicken broth and salt & pepper to taste. Bring the soup to a simmer. Purée the soup and return to the sauce pot. Last add the cream and spoon the soup into desired bowls. Top with Pumpkin Seed Oil and toasted pumpkin seeds. Delicious!

Apple and pumpkin – sounds like a good combo Heidi – a good excuse for me to jazz up my rather ordinary pumpkin soup!
