Risotto 'Amalfi'

This Fall we will be visiting the Amalfi Coast in Italy. During my searches for lodging and restaurants I researched the flavors of Amalfi to see what is common along the coast. Lemons are the most popular food item found in this region of Italy. Other flavors of Amalfi are anchovies and various seafood. Also, the Monti Lattari mountain region has many dairy farms that produce fresh ricotta and provolone cheeses. I can’t wait to explore this wonderful part of Italy. In the meantime I brought the flavors of Amalfi into my humble kitchen using fresh ingredients from the local supermarket! Come join me in my kitchen for a delicious risotto…

Risotto ‘Amalfi’
2 large lemons, zest & juice
2 large shallots, diced
2 tablespoons butter
1 tablespoon extra virgin olive oil
2 oz can anchovies in olive oil, drained
1 1/4 cups Arborio rice
3 cups vegetable stock
1/2 cup fresh ricotta cheese
1/2 cup shredded provolone cheese

In a medium deep skillet heat 1 tablespoon butter and the olive oil. Add theย shallots and sautรฉ for 3 minutes. Add the drained anchovies and break up. Anchovies will dissolve and create a wonderful nutty flavor (not fishy at all!)

Add the Arborio rice and lemon zest. Sautรฉ another minute or two. Add the lemon juice and 1/2 teaspoon salt. Stir. Slowly add the vegetable stock, one half cup at a time, over a period of 20 minutes; stirring occasionally.

Stir in the fresh ricotta. Continue to simmer until slightly thickened. Add the remaining butter and provolone cheese. Stir to combine and continue to simmer until all the liquid has been absorbed.

Scoop into bowls and serve immediately. Delicious!

    So excited for you, Linda, ahhh!!!!
    A friend of mine just came back there and had the most wonderful time there! He did say though, to be careful of the touristy-trap foodie places. That the food there isn’t as good as in other parts of Italy like say, Rome, but if you do some research ahead of time and talk to locals (think taxi drivers, not concierge), you’ll find the better spots.
    So freaking excited for you lady!!

I have been to northern Italy (Milan, Portofino, Cinque Terre) already and am looking forward to checking out Rome, Sorrento and then heading to the mountains of Santa Domenica Talao. Hopefully we’ll find only the best tasting places off the beaten track!! ๐Ÿ˜€๐Ÿ˜€

  2. This looks delicious and will give it a try – although time-consuming there is certain art in making a good risotto. Have a great trip in Amalfi! ๐Ÿ˜ƒ Great time to go with the cooler weather and out of school holidays!

    1. Thanks Julie! Risotto’s so creamy and yummy! Mushroom risotto is by far my favorite but I love coming up with different ways to cook it! I’ll try and have a good time in Italy too (won’t be too hard I think!) have a wonderful day ๐Ÿ˜€๐Ÿ˜€๐Ÿ˜€
