Today I’m sharing a tasty and healthy salmon dish. As mentioned in a previous post, Gremolata is an easy and healthy way to add tons of flavor to any dish. Gremolata is simply a combination of garlic and fresh herbs with lemon. I’ve substituted lime for the lemon in today’s recipe and fresh parsley, oregano and thyme are the herbs of choice. A squeeze of lime juice is the final ingredient to finish off this lovely salmon meal.
Salmon with Herb Gremolata
4 large salmon fillets
2 limes, zest & juice
extra virgin olive oil
salt & fresh ground pepper
handful parsley
handful oregano
handful thyme
3 garlic cloves
1/4 cup panko crumbs
1/4 cup breadcrumbs
1/4 cup chopped Brazil nuts (chopped fine)
Preheat oven to 400°F. Season salmon with the zest of one lime, a drizzle of olive oil, salt & pepper. Allow to marinate while making the gremolata. Gather a handful of parsley, oregano and thyme along with 2 cloves of garlic and the remaining lime zest.
Using a very sharp knife, finely chop the parsley, oregano, thyme, garlic & zest.
Place the panko crumbs, breadcrumbs and Brazil nuts in a shallow dish. Add the gremolata mixture and stir until combined.
Press the gremolata mixture on both sides of the salmon fillets. Place on a baking sheet that has been sprayed with cooking spray and bake 15 minutes. (Reserve any remaining gremolata for Gremolata Topped Potatoes which I’ll be sharing on Wednesday).
Remove from oven and squeeze with lime juice. Serve immediately. This is another great addition to the Meatless Monday menu…

I’m always looking for a fresh twist on salmon. It’s expensive but my kids lick their plates. This looks right up our alley.

I’ll show this recipe to my husband to cook some of the salmon in the freezer he just caught, but he is SO PICKY on how his salmon is prepared, lol! I’ll have to see what he thinks about it but personally I’d love to try this out Linda.

Just so happens that I am defrosting some salmon. I am excited to try this. ALl I have is fresh basil but I can improvise. This looks amazingly yummy. 🙂

Linda, it’s only 9 am here and I am about to jump in my kitchen and make this. It looks absolutely fantastic. I actually just learned what gremolata was over the weekend, so it’s interesting that it is used in this recipe!
