So full of flavor, elegant on the table and easy as the day is long. I love to make these at Christmas too since they can also be done in a larger quantity and in the oven…
Easy & Elegant Potatoes In Wine
5 medium red potatoes
3 onions halved and sliced
1 cup dry white wine
1/2 cup chicken stock
2 Tbs butter
1 Tbs fresh tarragon
salt & pepper
In a skillet melt the butter and sauté the onions until just tender.
Peel and slice the potatoes about 1/6 inch thick but keep the slices together. Fan each sliced potato out over the onions like the picture below. Add a generous amount of salt & pepper, the cup of wine and the chicken stock. Place a few sprigs of tarragon on top. Cover and cook on medium high for 10 minutes. Turn the heat down to a simmer and cook an additional 8-10 minutes more.
Remove the lid and serve in the pan. The onions are caramelized and rich and the potatoes have absorbed all the lovely flavors and liquid. Delicious!
