Here’s a hearty breakfast…perfect for breakfast, lunch or dinner! Full of healthy vegetables and tasty sausage…topped with fresh Parmesan. It’s sure to please!
Tuscan Brunch Burrito
8 Johnsonville Original Sausage Patties
6 large cremini mushrooms, cleaned and sliced
1-2 tablespoons extra virgin olive oil
1 vidalia onion, peeled and diced
1 large zucchini, cleaned and diced
1 large tomato, diced
2 handfuls fresh baby spinach
1/2 cup fresh shredded Parmesan cheese
4 eggs, cooked sunny side up
1/3 cup mayonnaise
1-2 tablespoons sriracha sauce
4 whole wheat tortillas (burrito size)
Cook the sausage until done (10-12 minutes). In the meantime, sautΓ© the mushrooms, onions and zucchini 8-10 minutes in hot olive oil. Season with salt and pepper. Add the tomatoes and sautΓ© a few minutes more. Add the fresh spinach leaves.
Cook the eggs sunny side up or to desired doneness. Combine the mayonnaise and the sriracha sauce. Chop the cooked sausage. Warm the tortillas. Lay each tortilla on a plate; spread with sriracha mayonnaise and layer egg, sausage and veggies on top. Sprinkle with Parmesan cheese.

Agreed! It needed heat – that’s why I added sriracha sauce to the mayonnaise – but chipotle would work too! ππ
