Cola Braised Pulled Pork

Here’s another summertime classic! At least once or twice a summer we make pulled pork sandwiches. I like to make them a little different each time. After seasoning the boneless pork roast I added some Cola, popped it in the oven to slow roast and then shredded it to make these awesome pulled pork sandwiches….oh, so good!

Cola Braised Pulled Pork
2-3 lb boneless pork roast
1 tablespoon paprika
1/2 tablespoon garlic powder
1/2 tablespoon onion powder
1/2 tablespoon brown sugar
1/2 tablespoon coriander
1/2 tablespoon dry mustard
1/2 tablespoon salt
7 oz Coca-Cola
4 slices Sharp Cheddar Cheese
4 hearty rolls
BBQ sauce for garnish

Heat the oven to 300°F. In a small jar combine the paprika, garlic powder, onion powder, brown sugar, coriander, dry mustard and salt. Season the pork roast all over with the seasoning mix. Heat a little olive oil in a large skillet and brown the pork on all sides. Place pork in a baking pan and pour the cola in the bottom of the pan. Cover with aluminum foil, place in the heated oven and roast for 3 hours.

Remove from oven and shred the pork using two forks – keeping the shredded pork in the juices. Split the rolls and place a portion of Cola Braised Pulled Pork along with a slice of sharp cheddar cheese on rolls. Top with BBQ sauce and top bun.
