Baked Low Fat Fries With Sage Butter
This is a great snack that I make this time of year because we are digging up our potatoes now. There is nothing like the taste of a fresh just-harvested potato! I seldom eat french fries because they just taste greasy most of the time. These fries are crispy on the outside and fluffy on the inside without the deep fry! Give them a try and you’ll see just what I’m talking about…

Baked Low Fat Fries With Sage Butter
3 large potatoes (I used red, but any potato will do)
1 egg white
1/2 tsp each salt and pepper
2 Tbs butter
6 sage leaves chopped
olive oil in a spray bottle

Preheat your oven to 425 °F. Peel and cut the potatoes into fry size pieces. Separate an egg using only the white and give it a little whip. Toss the potatoes in the egg whites, adding salt & pepper. Place in a colander to remove excess egg whites (do not rinse). In a small sauce pan heat the butter and chopped sage. Spray olive oil onto a cookie sheet and place the fries so they are not touching. Spray a little more olive oil on top and place in the oven for 25 minutes. Remove from the oven, plate, top with sage butter or any seasoning you choose and like all fries they are best when eaten hot! Delicious!!!

  1. Brilliant. I’m not sure why I never think to use sage. I even have some growing in my garden. I suppose it is because my grandmother always used ALOT in the Thanksgiving dressing. I am moving it to the front of the spice cabinet so I will remember to use it more. Great idea for the fries. Have a great day 🙂

    1. I make them with truffle oil, rosemary butter, malt vinegar spice… the list goes on and on…. Adventure with fries!?! I like it!
