It’s Burger Time! Having a burger doesn’t mean you have to eat unhealthy! I love Ratatouille – a traditional French vegetable stew made with eggplant and zucchini and other healthy veggies. With the remaining Jersey Fresh Produce from my recent Ride the Farm event, I’ve deconstructed a Ratatouille and roasted all the veggies together, grilled some seasoned chicken burgers and topped them with the roasted ratatouille – making this meal not only absolutely delicious but definitely healthy!
Chicken Burger with Roasted Ratatouille
1 small eggplant (I used a white one but a purple one would work great too)
1 small zucchini
1 small yellow squash
1/2 vidalia onion
1/2 yellow pepper
1/2 green pepper
1 fresh Jersey tomato (or any ripe tomato)
3 garlic cloves, minced
salt & fresh ground pepper
extra virgin olive oil
fresh thyme leaves
1 lb ground chicken
mozzarella cheese slices
burger buns
Heat the oven to 400° F . Chop the eggplant, zucchini, squash, vidalia onion, yellow and green peppers into bite size pieces and place in a large mixing bowl. In a small jar mix the garlic with 1 teaspoon fresh thyme leaves, 1/2 teaspoon salt, some fresh ground pepper and 2 tablespoons extra virgin olive oil. Pour over vegetables in the mixing bowl and toss gently. Chop the tomatoes and set aside.
Spread the marinated ratatouille vegetables, along with the chopped tomatoes, on a large baking sheet that has been sprayed with cooking spray. Cover with aluminum foil and bake 20 minutes. Remove the aluminum foil and continue to roast for 25 minutes. Meanwhile, combine the ground chicken with 1 teaspoon chopped fresh thyme, two pinches of salt, some fresh ground pepper and a drizzle of extra virgin olive oil.
During last ten minutes of roasting veggies, shape seasoned ground chicken into patties and grill 3-4 minutes on each side. Remove from heat and allow to rest a minute or two to redistribute the juices.
Top cooked chicken burgers with mozzarella. Place on burger buns that have been spread with a mixture of mayonnaise + fresh thyme leaves. Spoon roasted ratatouille on top of burger and serve immediately. Tender, juicy & delicious!
