When I was growing up my mother made a dish called ‘Tom’s Taco’s‘ and although I didn’t like it much when I was young, I had the memory of it recently. After reading her recipe, I quickly went to work changing it into something I would enjoy. I kept the Frito’s, because I remembered that was the best part. Here’s what developed…
Mexican Beef ~Meat Pie
1 Lb ground beef
1 green pepper diced
1 red pepper diced
1 sweet onion diced
1 16 oz can petite dices tomatoes (drained and rinsed)
3 cloves garlic sliced
1 chipotle pepper in Adobo sauce
2 tsp smoked paprika
2 cups Arugula
2 Tbs vinaigrette of choice
4 cup Frito’s corn chips
8 slices American cheese
2 cups sharp cheddar cheese
Preheat oven to 350 °F. In a saute pan cook the beef along with the onions, red & green peppers, onions, tomatoes and garlic until beef is cooked through and veggies are tender. Chop up the Chipotle pepper and add it along with the smoked paprika. This beef mixture was used also in my Empanadas. In 4 individual serving bowels add 1 cup of the corn chips to the bottom of each bowl. Next top with 1 cup of the beef mixture. Top each serving dish with 2 slices of American cheese and 1/2 cup of grated sharp cheddar cheese. Bake in the oven for 20 minutes until cheese is melted and bubbly on top. Mix the Arugula with the vinaigrette and top each dish equally. Totally not my mothers… Delicious!!!
