S'mores Bars

Summer is upon us! One of our favorite things to do in the summer is visit our ‘Creek House‘. With an outdoor fire pit roaring, we all sit around the campfire, laughing and telling tall tales! The kids love to toast marshmallows and enjoy s’mores for dessert. When it rains we substitute S’mores Bars. You don’t need a roaring fire to make these delicious treats!

S’mores Bars
8 graham crackers
2 sticks butter
1 cup brown sugar
3/4 cup sugar
4 eggs
1 teaspoon vanilla
1 1/2 cup flour
1 teaspoon baking powder
1 teaspoon salt
1 cup pecans
1 cup chocolate chunks
1 cup mini marshmallows

Heat the oven to 350 °F. Gather your ingredients. Place half of the graham crackers in a plastic bag and crush finely with a rolling pin; set aside. Crumble the remaining graham crackers into large pieces and set aside. Place the pecans in another plastic bag and crush slightly – leaving the pecans in large pieces; set aside.

In a large mixing bowl, using an electric mixer, cream the butter, brown sugar, sugar, eggs and vanilla until smooth. Add in the flour, baking powder, salt and crushed graham crackers. Mix until just combined. Stir in the pecans pieces.

Spread the batter into a lightly greased 13″ x 9″ baking dish. Bake 30 minutes or so until knife inserted in the center comes out clean. Remove from oven. Sprinkle graham cracker pieces, chocolate chunks and mini marshallows on top and place back into the oven.

Bake 10-15 minutes until marshmallows are lightly browned. Remove from oven. Cool ten minutes before slicing into bars. Serve alone or with a side of ice cream.

We love to make S’Mores at night at the Creek House…What Fun!!!

  1. Love that cabin and the bars! They look so perfect! I make smore bars, too, but I don’t usually do that topping! I’ll be stealing it! (btw – have you ever tried them frozen? I discovered how good they were frozen on a winter camping trip!)
