On Tuesday I shared a fabulous Cuban Mojo Pork Roast inspired by my husband’s recent trip to Florida – with the intention of making today’s Cuban Sandwiches with the leftovers. I first had a Cuban Sandwich about thirty years ago in Panama at Niko’s Cafe. Since then they’ve been a favorite of mine – but I hadn’t made them in my own kitchen until now. Citrus-marinated pork, thick slices of Tavern Ham, Swiss cheese & Dill pickles pressed between two slices of rustic bread that’s been slathered with Roasted Garlic, Peppercorn & Cilantro Aioli & a dollop of Dijon. Grilled to perfection. Now that’s a sandwich!
Cuban Sandwich
4 slices Cuban Mojo Roasted Pork
4 thick slices deli Tavern Ham
4 thick slices deli Swiss Cheese
4 slices dill pickles
Dijon mustard
Roasted Garlic, Peppercorn & Cilantro Aioli (recipe below)
4 slices hearty rustic bread (I used a Ciabatta loaf)

Heat the roasted pork and tavern ham slices slightly. Butter both sides of the bread. Using a Grill Pan & Press Set, place the bread, inside-side down, in skillet and toast slightly. Meanwhile make the Aioli.
Roasted Garlic, Peppercorn & Cilantro Aioli
1/2 cup mayonnaise
1/2 lemon
2 roasted garlic cloves
1/2 teaspoon fresh ground black pepper
2 tablespoons fresh chopped cilantro
Squeeze the juice from the lemon half. In a small mixing bowl, whisk together the mayonnaise, lemon juice, roasted garlic & fresh black pepper. Fold in the cilantro and whisk to combine. Spread the Roasted Garlic, Peppercorn & Cilantro Aioli on the inside of each slice of buttered-toasted bread. Squirt on some Dijon mustard. Layer one side with roasted pork, tavern ham, Swiss cheese and pickles. With the outside of each bread slice buttered, place sandwich in the Grill & Press Pan and place Press Lid on top. Cook about 3-5 minutes on each side, flipping sandwich over for even-cooking, until crusts are crispy and lightly toasted. Slice and serve. Boy were these awesome!!
