Orecchiette Pasta With Sauted Tomatoes, Sausage And Fresh Basil
The other day I bought a big package of grape tomatoes for a salad I was making for a picnic, the only problem was when I left the house I left the tomatoes too! Ugh… alas, I decided to make a sautéed tomato and pasta dinner the next night. It was very good – so I am sharing it with you.

Orecchiette Pasta With Sauteed Tomatoes, Sausage And Fresh Basil
1 large package grape tomatoes
5 large garlic cloves, sliced thin
1/2 cup diced onion
1 lb bulk sweet sausage
2 Tbs olive oil
1/2 box Orecchiette pasta, cooked according to package directions
1 bunch fresh basil, chopped
1/2 cup Pecorino cheese
1/2 cup dry white wine
1/2 chicken stock
salt & pepper

Heat olive oil in a deep-sided sauce pan. Add tomatoes and cook for 10 – 15 minutes until the skin on the tomatoes collapse when pressed. Next add the garlic and continue cooking. When the tomato moisture begins to caramelize, add the white wine. Cook for 3 minutes then add the chicken stock.

In a separate pan cook the sausage and onions.  Add the cooked sausage and onions to the tomato mixture, add the basil, and last, the cooked pasta. Top with grated cheese and serve. Delicious!

    1. Sure would, and why not add more veggies… asparagus would be good and spinach and even zucchini. I suggested shrimp to another fellow blogger who is thinking of serving it room temperature as a pasta salad, without the sausage too.

    1. Simple and delicious! Leftovers could make a great soup too. Just add some spinach and it’s a whole new meal.
