Honey Dijon Rice

On today’s menu is a quick and tasty rice. I love to experiment with different flavor combinations. So when I made some pork chops seasoned with honey and dijon, I decided to carry those flavors over in the rice dish that accompanied the meal. Sweet and salty at the same time. Yummy! I’ll share the Honey Dijon Pork Chops on Friday

Honey Dijon Rice
1 tablespoon extra virgin olive oil
1/2 sweet onion, diced
2 garlic cloves, minced
1 cup rice
1 tablespoon honey
1 tablespoon Dijon mustard
1 tablespoon soy sauce
1 tablespoon cider vinegar
2 cups vegetable stock

In a medium saucepan, heat the oil. Add the diced onion and sauté for three minutes. Add the garlic and sauté another minute. Add the rice and sauté one more minute. In a small bowl mix the honey, Dijon, soy sauce and cider vinegar. Stir into the rice. Stir in the vegetable stock.

Bring to a boil; reduce heat, cover and simmer until rice is tender (12-15 minutes). Scoop into a serving bowl.
