Lemon-Cream Cheese Stuffed French Toast

I was chatting with my mom on the phone the other day. It was her and my dad’s anniversary and she was telling me all about this wonderful breakfast she had just had at a restaurant. Raving…I mean really raving about it…saying how she hoped it wouldn’t disappear off the menu EVER ‘raving’. As she was describing it to me I thought – well, that doesn’t sound too hard to make…so here Mom – a late anniversary gift just for you!

Lemon-Cream Cheese Stuffed French Toast with Fresh Blueberries & Syrup
4 slices hearty bread
2 oz cream cheese, softened
1/4 cup Lemon Curd
2 eggs
1/4 cup milk
dash of vanilla (optional)
margarine
Fresh blueberries
Blueberry syrup
whipped cream (optional)

Gather your ingredients.

In a mixing bowl, whisk the cream cheese and lemon curd together until smooth. Crack the eggs and combine with the milk and dash of vanilla in a shallow dish. Spread the lemon-cream cheese mixture on two of the hearty bread slices and top with remaining slices.

Heat a skillet with some margarine. Dip the lemon-cream cheese stuffed bread in the egg mixture on both sides and cook in hot margarine until brown on both sides. Serve with a dollop or two of whipped cream, some fresh blueberries and blueberry syrup. Take a big bite! (Hope you like it Mom!)

  1. Gorgeous! My sister’s grandmother-in-law makes her own lemon curd and I feel that this would be a great homage to her lemon curd – I’ll share this recipe with my sister so she can make it (and I’ll have to make it too, of course!) Nom!

    This is so sweet of you, recreating your moms anniversary meal like this! Was it every bit as good as she described it?
    Funny because I’m like that too. I read other peoples menus and recreate it when I get home, heehee.
    Or even just seeing a picture of it is enough to get my brain going, ‘hmmmm…’

    1. Thanks Dana! Yes, it was incredible!! I am so like you!! I can’t get enough of looking at menus for ideas – then creating it my own way or tasting something at a restaurant and saying to myself “I can make it better if…” (we are so bad!!) 🙂

      1. One of these days when we get together, we’re gonna stay at a big air BnB house, go eat and try great food at night and create new food during the day.
        It’ll have a big a** kitchen 😀
