My hubby makes the best salmon ever and when he makes it, it’s always a great big piece. Well I love that because the next day I make my Crispy Salmon Cakes With Dill Butter. Easy and full of flavor. The added dill butter really makes this dish a winner.
Crispy Salmon Cakes With Dill Butter
2 cups flaked cooked salmon
1/2 onion, diced
1/2 cup mayonnaise
5 Tbs butter
1 Tbs Dijon mustard
1 egg
1 cup panko crumbs
3 Tbs chopped dill
In 1 Tbs of butter caramelize the onions on medium low.
Gently flake the salmon with a fork. Add the egg, salt & pepper, mayonnaise, caramelized onions, 1 Tbs of the chopped dill and the Dijon mustard. Form the mixture into 4-6 oz patties.
Heat 2 Tbs of butter in a skillet and coat each salmon patty in panko crumbs. Cook in the butter until crispy…about 4 minutes on each side. Melt 4 Tbs of butter and add the rest of the dill. Plate the Crispy Salmon Cakes and top with the Dill Butter. I served these with a side of Tri Colored Roasted Carrots….Delicious!!!
