It’s Taco Tuesday! On today’s menu are Carne Asada Tacos. Carne Asada is the Spanish term for meat that has been marinated, grilled and sliced. I topped these tacos off with Mango Salsa, Guacamole & Queso Blanco. Another winner on the Taco Tuesday menu…

Carne Asada Tacos
1 1/2 lb skirt steak
1/4 cup White Wine vinegar
2 teaspoons chili powder
2 teaspoons cumin
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
zest & juice of 1 lime
10 corn tortillas
Toppings
sour cream
Mango Salsa
Fresh Guacamole
Queso Blanco (or Farmers Cheese)
2 limes, quartered

diced red onion

Lay the skirt steak in a shallow dish. In a small bowl, whisk the vinegar with the chili powder, cumin, garlic powder, onion powder, salt, lime zest & juice. Pour over the skirt steak and allow to marinate at least ten minutes. Gather the toppings and heat the tortillas. Grill the steaks 1-2 minutes on each side; remove from heat and slice against the grain.

To assemble: Place a warm tortilla on a plate; top with sour cream, grilled carne asada, Mango Salsa, fresh guacamole, Queso Blanco, diced red onion and a squeeze of lime.
