Today’s Mediterranean Rubbed Chicken is a flavorful addition to the Fiesta Friday party! Crushed fennel and cloves are combined with sweet brown sugar and savory onion, garlic & cumin and rubbed all over chicken breasts, thighs, drums and wings…then grilled to perfection. So much flavor…you’re going to love these!
Mediterranean Rubbed Chicken
1 whole chicken, cut up
(or 2 breasts, 2 thighs, 2 drums & 2 wings)
1 tablespoon extra virgin olive oil
1/4 cup brown sugar
1 tablespoon onion powder
1 tablespoon garlic powder
1 tablespoon ground cumin
1/2 teaspoon red pepper flakes
1/2 teaspoon salt
1 tablespoon fennel seeds, crushed
1/2 tablespoon cloves, crushed
Heat the grill nice and hot (500 °F). In a small bowl, combine the brown sugar, onion powder, garlic powder, ground cumin, red pepper flakes and salt. Using a mortar & pestle crush the fennel seeds and cloves until fine.
Place the chicken breasts, thighs, drums and wings in a large bowl. Drizzle with the olive oil and sprinkle with the Mediterranean Rub and toss to coat thoroughly.
Place chicken on the hot grill and cook 25-40 minutes until chicken is fully cooked, turning occasionally.
Remove from the grill and place on a platter. Allow to sit for a minute or two to redistribute the juices. Dig in!
