The classic peanut butter cookie is another favorite dessert in The Cookie Jar! In fact it’s my third son’s absolute favorite. Of course I didn’t invent the original peanut butter cookie recipe but here’s the one I use that’s been tweaked over many years until it’s just right…
Peanut Butter Cookies
1 stick softened butter
3/4 cup All Natural no salt added Creamy Peanut Butter
3/4 cup sugar
3/4 cup brown sugar
1 egg
1 teaspoon vanilla
3 tablespoons milk
1 3/4 cups flour
1 teaspoon salt
1 teaspoon baking soda
Hershey’s chocolate kisses (optional)
Heat oven to 375. In a large mixing bowl combine the butter, peanut butter and the sugars. Using an electric mixer, blend to combine. Add the egg, vanilla and the milk. Blend until smooth. Sift in the flour, salt & baking soda. Mix on high speed until fully combined.
Spoon dollops of cookie dough onto a baking sheet and press with a fork dipped in sugar into a criss-cross pattern. Bake 10-12 minutes.
Alternately don’t press some with a fork before baking – once baked, remove cookie from oven and press with individual Hershey kisses after baking.
Take a big bite of the cookie of your choosing: Sugar covered or Kiss covered!
Enjoy!
Linda~
