If you’re in the mood for a flavored rice dish to accompany your meal – this one does the trick. Another great addition to the Rice Collection! This recipe was featured on Tickle My Tastebuds Tuesday for Cinco de Mayo..go check it out and see some other really great recipes!
Spanish Red Rice
1 tablespoon extra virgin olive oil
1 small onion, diced
3 heaping tablespoons tomato paste
3 garlic, minced
1 1/2 cups rice
1/2 teaspoon cumin
1/2 teaspoon cilantro
1/2 teaspoon thyme
1 teaspoon salt
fresh ground pepper (to taste)
2 tablespoons Worcestershire sauce
3 cups water
1 lime
In a medium saucepot, heat the oil, onion and tomato paste on medium heat. Sauté for five minutes; stirring frequently. Add the minced garlic and sauté another minute. Add the rice. Stir to combine and continue cooking a few more minutes; adding the cumin, cilantro, thyme, salt & pepper. Stir in the Worcestershire sauce and water. Bring to a boil; reduce heat to low, cover and simmer 15 minutes until rice is tender.
Place rice in a serving dish and squeeze with the juice of the lime. Serve.
