Crunchy Fish Tacos & Lime Slaw
It’s Taco Tuesday! This healthy taco is so delicious and filling. I could honestly eat this every day. If you want a simple fish taco that is not beer battered and fried but still has all the decadence of crunch I recommend you give this taco a go…

Crunchy Fish Tacos & Lime Slaw
4 flour tortilla
2 tilapia fillets
1 cup panko crumbs
1 egg beaten
1 Tbs + 1/2 tsp chipotle chile pepper
1/4 cup olive oil or coconut oil
1 cup shredded cabbage
1/2 lime juiced
1/4 tsp grated ginger
1/4 cup mayonnaise
1/2 cup Fresh Salsa Made Easy or salsa of choice
salt & pepper

Mix the panko with 1 Tablespoon of chipotle chile pepper and 1 tsp of salt. Cut the fish into 1 to 2 inch squares and dredge in the egg mixture then the panko. Heat your oil in a cast iron skillet and fry the fish until brown on all sides.

Mix the cabbage, mayonnaise, 1/2 tsp chipotle chile pepper, juice from the lime, ginger and 1/2 tsp of salt.

Heat the tortilla. Place 4 to 5 pieces of fish inside the tortilla. Top with the lime slaw, salsa and squeeze some more lime juice on top. So good!
