This is one of those recipes that hit me when looking through my pantry and fridge and having only 20 minutes to get something together. The end result was incredibly tasty…
Pork Patties with Bacon over Cheddar-Honey Polenta
1 lb ground pork
1/2 teaspoon salt
1 teaspoon coriander
1/2 teaspoon fennel seeds
4 slices bacon
1/2 cup instant polenta
1/2 cup light cream (or milk)
1 cup chicken stock
1/2 cup shredded cheddar cheese
2 tablespoons honey
Cook bacon until crisp. Drain bacon drippings.Β Season ground pork with salt, coriander and fennel seeds. Shape into burgers. Cook 5 minutes each side.
Bring the light cream and chicken stock to a boil in a medium saucepan. Add the instant polenta and stir to combine. Remove from heat and add the shredded cheddar and honey. If polenta is too thick add a bit more cream or chicken stock to thin slightly.
Scoop some polenta onto a plate. Top with pork patty, bacon and some shredded cheddar cheese. If desired, spoon a little of the pan drippings on top. Eat.

Amazing as always, Linda! What a fabulous breakfast or brunch! Growing up we mostly enjoyed polenta topped with something Italian & saucy. What a pleasant change for me this is to see π Just love me some “Sisters” π playing catch up today π

I’ve never tried polenta but really want to. I think this would be a great one to start with as it’s full of flavour my son and I love! Sounds amazing x
