I have said it before and I will say it again… I love Mac & Cheese! I have so many crazy ways floating around in my head about how I believe it would be good that I’ve made a long list to experiment. When they make the cut, I will share them with you. Well, this one surely did! And it’s a perfect edition for our Meatless Monday series not to mention our Mac & Cheese Mondays…
Smoked Gouda Mac & Cheese With A Caramelized Onion and Dijon Mustard Crust
1 cup macaroni noodles, uncooked
1 1/2 sweet onion, sliced thin
2 Tbs butter
1 Tbs flour
1 cup milk
1 cup Smoked Gouda, shredded
1 pretzel roll, made into fine breadcrumbs
1 Tbs Dijon mustard
Preheat the oven to 375 °F and cook the noodles according to the package directions. In a sauté pan melt 1 tablespoon of butter and cook the onions low and slow until they caramelize and become a beautiful buttery brown. When they are finished put them in a separate bowl.
In the same pan heat the other tablespoon of butter; then add the flour and make a rue. Next add the milk and cook on low until the mixture begins to thicken. Remove from the heat and stir in the grated smoked Gouda cheese. Add the cooked strained noodles and mix together. Pour into one oven safe dish or four small oven safe dishes.
In the bowl with the caramelized onions add the mustard and bread crumbs. Next top the mac & cheese mixture with the onion mixture. Bake for 20 – 25 minutes.

OMG – so many of my favorites words and flavors beginning with SMOKED GOUDA! My favorite cheese! Caramelized onions – OHHHH!!!!!!! – Mustard! YUM – all with macaroni and topped with pretzel crumbs. I’m dying!!!
