Baby Beet Greens, Spinach & Strawberry Salad With Lemon Vinaigrette
With Spring just around the corner it’s salad time… and the blend of the baby beet greens, strawberries and lemon vinaigrette is so fresh I think I’m in love with this combination! The vinaigrette has a real lemon kick and the strawberries are sweet… Yum!!!

Baby Beet Greens, Spinach & Strawberry Salad
1 bag baby spinach
1 bag baby beet greens (if you can’t find them use arugula)
4 hard boiled eggs sliced
1/2 cup shredded Swiss or Gruyere cheese
3 large strawberries, two sliced; one whole

Lemon Vinaigrette
1/4 cup fresh squeezed lemon juice
2 tsp lemon zest
2 Anchovies (do not omit… trust me!)
1 1/2 tsp celery salt
2 tsp pepper
3 Tbs minced shallots
3/4 cup olive oil

Assemble the salad. Add all the vinaigrette ingredients to a blender except the shallots. Blend them for about 30 seconds. Add the shallots and stir in with a fork. Drizzle on the salad lightly, right before serving. Do not over dress, you can always add, but you can not take away. So Good!!!
