Just like Linda, I still have several hard boiled eggs to eat. So I made a breakfast my mom used to make a long time ago. It’s a simple and delicious breakfast over hearty multi grain bread. The bread adds a nice nutty crunch with the creamy egg sauce.
Hard Boiled Eggs In White Sauce
2-4 hard boiled eggs chopped
2 Tbs butter
1 Tbs flour
1 cup whole milk
1/4 cup Swiss cheese grated, (or any cheese)
1 Tbs fresh parsley
1 tsp salt
1/2 tsp pepper
4 slices hearty grain bread toasted
Melt the butter in a sauce pan. Add the flour and cook for about a minute. Next add the milk, salt and pepper. Last stir in the cheese, eggs and parsley. Allow the sauce to thicken then pour it on toast and eat. Simple…

Creamed eggs on toast! My mother made this for dinner at least once a month when I was a girl. I loved it. Strange that I haven’t made this myself over the years. I should!

I feel the same way… as a kid I would have hated the grainy bread, but now i love it! I add a little cheese too… the Swiss is a great addition.
