All American Meatloaf Sandwich

All American Meatloaf Sandwich 1
This sandwich is so good that I make the meatloaf just to make the sandwich! My hubby says it’s the best meatloaf sandwich he’s ever had. I for one agree! I hope you get the chance to try this delicious, moist and flavorful loaf on a roll.  

All American Meatloaf Sandwich
4 ciabatta rolls
4 slices All American Meatloaf 
1 Tbs olive oil
1/2 onion sliced
1 1/2 cups sliced mushrooms
2 cups spinach
1 Tbs flour
3/4 cups half and half
1 cup shredded Swiss cheese
2 tsp Hawaiian Salt
1 tsp pepper
4 Tbs mayonnaise

Slice 4 slices to desired thickness of the All American Meatloaf. In a sauce pan heat the olive oil on low and saute onions with the Hawaiian salt. Add the mushrooms and spinach and cook until mushrooms and spinach are soft and wilted. Add flour and cook an additional two minutes. Next add the half and half and stir for two minutes more. Last add the Swiss cheese, turn off the burner and stir until the cheese melts into the sauce.

Cut the rolls and smother 1 tablespoon of the mayonnaise on each slice. Layer on the sliced meatloaf and top equally with the mushroom sauce. Place under the broiler until the cheese sauce becomes brown and bubbly. Delicious!

    1. Thanks Julie… I love meatloaf… but there is very little I don’t love. Cooking is like choosing an outfit or a pair of shoes… what am I in the mood for.
