Who doesn’t love a good moist meatloaf. Served with a good old fashioned baked potato and a little salad gives you a simple one shot oven dinner. The potatoes cook along side the meatloaf without a lot of mess and fuss. Ahhhhh! Pour a little glass of wine and enjoy the relaxation.
All American Meatloaf
2 Lbs Ground Beef 90/10
1/2 cup milk
1/2 cup ricotta cheese
1/2 cup Heluva Good French Onion sour cream
1 egg
1 red pepper diced small
1 cup fresh bread crumbs
1 1/2 tsp garlic powder
1 tsp celery salt
1 tsp kosher salt
1 tsp pepper
Preheat oven to 400 °F. Put the ground beef and the milk in a mixing bowl and with your hand, gently mix them together. Allow to let stand for about 10 minutes. Next add the rest of the ingredients and again gently mix together. In a 9 x 11 pan form the meat into a loaf. Place in the oven and cook for 30 minutes. Reduce the heat to 325 °F and continue cooking for 30 more minutes.
Glaze
1/2 cup ketchup
1/4 cup yellow mustard
2 Tbs Worcestershire sauce
Mix the glaze then remove the meatloaf from the oven and pour mixture all over the top. Return to the oven and continue cooking for 15 minutes until the meatloaf reaches 160 °F internal temperature. Turn off the oven and turn on the broiler for 5 minutes. Remove the load and allow to rest.

My hubby could eat mashed potatoes every night… I just don’t feel like peeling potatoes every night…LOL!!!
