Chicken quarters are under utilized in my opinion, very economical and just plain good. I like to grill them in the summer and roast them this time of year. Yet another simple dish to please our happy home. We shared them outside on this beautiful afternoon for a quick but delicious picnic.

Rosemary Roasted Chicken Quarters
5 Tbs soft butter
1 Tsp onion powder
1 Tsp garlic salt
1 Tsp chopped rosemary
1 Tbs chopped parsley
1/2 tsp pepper

Preheat the oven to 375 °F. Soften the butter and add all the spices together in the butter. Loosen the skin from the chicken and generously rub the seasoned butter under and on the chicken. Roast for 1 and 1/2 hours. Remove from the oven and serve. I roasted some vegetables in the oven the last 30 to 45 minutes of the chicken roasting time.

  1. So succulent, and a lovely combination of flavours. I can imagine how good it would be to enjoy outdoors on a lovely day. We have a while to go before we can consider dining ‘al fresco’ here in the UK, but the dish will taste just as good indoors.

  2. Well, the day we ate is was better than the day it posted… Lol! I do love this blessed time of year though. God is smiling on all the blooming blooms….

    1. Thank you Antonia, I thought the cowhide background would be kind of funny with chicken… But I prefer the picnic background which was what we really ate on.
