I’ve been to several different restaurants recently that have Brunch Burgers on their menus. Although I didn’t order them I was intrigued by the addition of the fried egg. So in today’s burger I’ve assembled the flavors of a breakfast sausage and added maple bacon, fried egg and tomato jam (from Monday). WOW! I’ve been won over!

Brunch Burgers
2 lbs ground pork
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon ground sage
1 teaspoon ground thyme
1 teaspoon fennel
1 teaspoon rosemary leaves
8 slices maple bacon
1/2 cup tomato jam
handful of arugula
creamy spreadable Brie
4 eggs
4 crusty rolls
Place the fennel and rosemary leaves in a Mortar & Pestle (if you don’t have one then use ground fennel & ground rosemary). Grind fennel & rosemary until coarsely ground. In a large bowl combine the pork, garlic powder, salt, sage & thyme. Add the coarsely ground fennel & rosemary.
Shape the seasoned ground pork into four large burgers. In a large skillet, brown the burgers 4-6 minutes on each side until nicely browned and cooked through. Meanwhile cook up the maple bacon and fry up the four eggs (over-easy). Take the Tomato Jam and the Creamy Spreadable Brie out of the fridge, along with the arugula.
Split the rolls and toast them, if desired. To assemble the Brunch Burgers: spread the Brie on the bottom of the toasted bun, layer with the burger, arugula, egg, maple bacon & top with a generous portion of tomato jam.

This is such and inspirational recipe. I loved your use of the mortar and pestle and the fried egg is just yummmm….I bet I could easily replace the meat with a vegetarian patty and life would be complete 🙂 Thanks Linda

That bun looks so wonderful and delicious! I rarely eat the bread/bun. I just use it a holder and I eat the stuff inside.
Brie or blue cheese on a burger is so good! Miam, miam! I’m so glad I’ve had lunch already!

🙂 That one I would have to try a bite of…or maybe just eat the top if it’s a yummy as it looks.
I cut off the crust of toast and eat that and save the middle for bread crumbs, croutons, or tartines for the little one.
I have to shave all the calories I can so I can have wine and chocolate! Priorities! 🙂

Absolutely!! And yes, this bun is the best – it’s the only one I use for my own personal burger – and if I’m having an egg sandwich on the weekends I will toast it – wowza! But you’re right…as I get older I’ve had to cut down on the calories – so if it doesn’t taste absolutely delicious after one bite – I just don’t eat it! 🙂

Brie, yum! I haven’t been brave enough to do the fried egg on my burger yet. In fact, I just removed one this weekend because I didn’t know how to eat it! (I thought I’d be wearing it!) You are an inspiration!
