My sister in law Soraya once gave me a jar of homemade Tomato Marmalade – it was so very good! We used it as an appetizer with crackers and cream cheese…yummy! So I recently decided to try my hand at making it…but as I like things simple and quick, and I did not want to make a lot, I started with a can of Fire Roasted Tomatoes. The results were divine! We used half of this delicious jam with crackers and cream cheese and the other half I used for a recipe I’ll be sharing on Wednesday!
Tomato Jam
14.5 oz can Fire Roasted Diced Tomatoes, drained well
4 tablespoons sugar
pinch of salt
1 lemon, zest & juice
Place the drained diced tomatoes in a saucepan and bring to a boil on medium-high heat. Add the sugar and salt and stir well. Zest and juice the lemon and add to the bubbling tomatoes. Lower the heat and simmer 30-45 minutes.
Cool slightly and spoon into a jar. Refrigerate until ready to use.

I do the same with my Garden Chili Sauce. In the winter, I’ll use canned in the summer fresh tomatoes..:)

Hi Linda – good to see its light on sugar and salt – but do you think this means it wouldn’t keep for too long?

I don’t think it would keep for more than a week…that’s why I made a small batch – I used it up within two days 🙂

Wonderful simple recipe! I can’t wait for our tomatoes either! Right now they are but wee seedlings on the windowsill. We can’t plant outside here until Memorial Day!!! So we plant them in pots and bring them in and out once the weather gets over 60 during the day or last chance of frost has passed. (Which is typically Memorial Weekend, but we’ve had it snow here on the 4th of July!)

Thanks! So cool that you’ll have fresh tomatoes soon! I am not a big fan of the tomatoes available in winter which is why I used canned – but with fresh tomatoes it would be so much better

If you do go to SA< you'll be about 250 miles from me. I was born and raised in the Hill Country (which includes SA). If you ever get there, I have plenty of tips for restaurants, food trucks, farmers' markets, etc etc etc.
