This dish is so comfy on a cold day like today. And what better way to tell my Hubby how much I love him than with a hearty black bean chili. The beans are high in fiber so they are perfect to fill your belly and the smoked paprika just warms you on the inside. So delicious and excellent I can’t wait until my next bowl!
Black Bean & Spanish Hot Smoked Paprika Chili
2 Lbs ground beef
3 15.5 oz cans black beans drained and rinsed
1 28 oz can diced tomatoes drained and rinsed
1 1/2 large sweet onion diced
1 tsp red pepper flakes
2 tsp celery salt + more if needed
1 Tbs cumin
1 Tbs Smoked paprika
4 cloves of garlic chopped
1 32 oz container beef broth
In a large pot over medium heat brown the ground beef along with the cumin, red peppers and celery salt. Next add the diced onions and cook until the onions begin to become tender. Next add the chopped garlic and the drained and rinsed black beans. Add the drained and rinsed tomatoes, beef broth and smoked paprika and simmer on the stove for about 30 minutes.
After I scoop a hearty amount of black bean chili into my bowl I like to top it with raw onions, sour cream, hot pepper flakes and chips. Delicious!
