Honey, Lemon, Feta & Walnut Pasta

Today is Ash Wednesday – the beginning of the 40 days of Lent for all Christians (not counting Sundays). During these 40 days of repentance we reflect on our lives, the things we have done and our transgressions; praying for forgiveness and observing specific days of fasting and abstinence from meat. Traditionally during Ash Wednesday we fast and abstain from meat, eating just one full meal. We observe Lent to mirror Christ’s 40 days in the desert where He endured temptation.

In light of today’s abstinence and fasting I have prepared a meat-free dish that is healthy, tasty and very filling.

Honey, Lemon, Feta & Walnut Pasta
1 lb Mostaccioli Rigati (or Penne if you prefer)
2 tablespoons extra virgin olive oil
1 tablespoon butter
2 garlic cloves, minced
1 lemon, zest & juice
1/4 cup honey
4 oz feta cheese crumbles
1/2 cup chopped toasted walnuts
1/2 cup fresh shaved Parmesan

Cook pasta as package directs; drain and set aside. In a deep skillet, heat the olive oil and the butter on medium high heat. Add the minced garlic and sauté for just 30 seconds. Add the cooked pasta into the garlic butter in the skillet. Toss well.

Zest the lemon, cut in half and squeeze out 1/4 – 1/2 cup fresh lemon juice. Pour the lemon juice into the pasta and toss to combine. Pour the honey over the pasta and stir to combine.

Add the feta cheese crumbles and toss well.

Scoop the pasta on plates and top with lemon zest, chopped walnuts & shaved Parmesan.

    1. Thanks Ginger – I guess I might be! When we were growing up, during Lent we got fish, mac and cheese and stewed tomatoes every Friday…since I never liked those meals I have a hard time making them! So I try to make our meatless Fridays appetizing! 🙂 🙂 🙂

      1. My region’s traditional Friday dish is meat-filled ravioli. Apparently the fact that the meat’s mixed with spinach and covered with the pasta makes it impossible for God to spot…
        Shocking.
        They are actually called ‘Herrgottsbscheißerle’, ‘God’s cheaters.’
