Today I’m sharing a tasty chicken dish that is sure to please! I’ve been making this one for almost thirty years and it’s still fabulous…another delicate linen provided my Mom!
Chicken Chianti
8 bone-in chicken thighs, skins removed
salt & pepper
flour
1 tablespoon extra virgin olive oil
1 tablespoon butter
1 onion, diced
3 carrots, diced
3 garlic cloves, minced
3 prosciutto slices, chopped
1/2 cup Chianti red wine
1/2 cup chicken stock
8 oz tomato sauce
1/2 teaspoon basil
1/2 teaspoon oregano
1/2 teaspoon parsley
Season the chicken thighs with salt and pepper and dust with flour. Heat the olive oil and butter in a large skillet. Place chicken thighs in hot skillet and brown on each side 3-5 minutes. Remove thighs from skillet and place on a large dish. To the hot skillet, add the onions, carrots, garlic and prosciutto. Sauté 5 minutes.
Add the chicken back in, along with the juices that have collected on the plate. Pour in the Chianti. Stir in the chicken stock and the tomato sauce. Sprinkle the basil, oregano, parsley and additional 1/2 teaspoon salt and fresh ground pepper (to taste). Bring to a boil; reduce heat to low, cover and simmer for a minimum of 30 minutes. The longer you let it cook the more tender and tasty it gets!
Serve with cooked rice, pasta or over mashed potatoes. Delicious…

i once made chicken in red wine and it turned out horribly looking and so unappetizing. your version is BEAUTIFUL. i love that you use dark meat, which i think is the best part of the chicken.
