Oat, Honey & Peanut Butter Granola Bars

On busy mornings my boys always like something to grab & go…These granola bars are the perfect breakfast bar – they’re also great after a workout or as an after school snack…

Oat, Honey & Peanut Butter Granola Bars
2 cups quick oats
1/2 cup wheat germ
1 cup flour
3/4 cup brown sugar
1 teaspoon salt
1 teaspoon cinnamon
1/2 cup canola oil
1/2 cup honey
1/2 cup peanut butter
1 egg
1 teaspoon vanilla

Heat oven to 350 °F. In a large bowl, combine the oats, wheat germ, flour, brown sugar, salt & cinnamon. Blend in the canola oil, honey, peanut butter, egg and vanilla. Spoon into a 13″x 9″ greased baking dish.  Wash your hands and then use your fingers to press the granola mixture into the baking dish.

Bake 22-25 minutes until knife inserted comes out clean. Remove from oven and cool 10 minutes. Slice into 12 equal rectangles and serve. Keeps for a week in an airtight container. Or individually wrap granola bars in plastic wrap for an easy Grab & Go Breakfast.
