I love to make fluffy omelets, but sometimes I want to just make a frittata. It’s basically the same thing only no folding or flipping. My hubby and I love Brussels sprouts and this is the season for them. So to power pack this breakfast, I shredded them to give this breakfast a real boost…
Vegetable Frittata
1/3 cup diced sweet onions
1/2 cup diced roasted red peppers
3 eggs beaten with 2 Tbs milk
5 shredded Brussels sprouts
1/3 cup shredded Gruyère cheese
1 Tbs butter
In a medium sized non-stick pan heat butter and saute Brussels and onions till tender and browning. Add peppers and heat for 3 minutes more.
Beat the eggs with milk and a pinch of salt & pepper then pour them straight over the veggies.
Cook for 2 to 3 minutes. Add cheese on top and cover for 3 to 5 minutes more, make sure to turn the heat to low. Pop in the broiler on high for exactly 3 minutes uncovered.
Transfer to a plate for serving. Simple and delicious!

It was a truly great addition. I LOVE Brussels Sprouts. We are actually picking them from the garden this week.
