Eggnog Pancakes
Eggnog is a delightful drink that’s available during the holidays! It has such a unique flavor that I adore…so I decided to make some homemade pancakes for breakfast that incorporate this delicious unique flavor…I loved the way they puffed up in the skillet and were so dense…yummy! They would be the perfect breakfast to add to your seasonal menu…

Eggnog Pancakes
1 1/2 cups flour
1 tablespoon baking powder
2 tablespoons sugar
1 teaspoon salt
1 1/4 cup eggnog
1 egg
1 tablespoon canola oil
1 teaspoon vanilla extract
margarine for cooking

In a large bowl sift the flour, baking powder, sugar and salt. Add the eggnog, egg, oil and vanilla. Whisk lightly until blended; there may still be some lumps. Meanwhile, heat a pat of margarine in a skillet on medium high heat. Then reduce to low-medium and add about 1/3 cup pancake mix for each pancake. Cook until bubbles form on the top of the pancake and bottom is nicely browned.

Turn pancake over and cook the other side. This batter makes about 12 pancakes. Plate ’em up…Add some pancake syrup and enjoy a tasty alternative to boxed pancake mix that has a wonderful Christmas flavor..Enjoy!

  1. Eggnog and pancakes are two of my favorites! I love this combination. I also tried a bread recently that was made with just eggnog, flour and yeast. It was so sweet and buttery! I was so bummed to see Whole Foods stopped carrying it so abruptly after Christmas. I’ll have to make my own for a wintry January treat!
