We’ve been going to a lot of Holiday Parties lately…So much rich food…Tonight we have a night off from the party-circuit and we’re taking it easy. We needed something healthy that has flavor – because you know, sometimes healthy is boring! But not these Salmon Burgers…they are healthy – an excellent source of omega-3 fatty acids, vitamin B12, vitamin D and selenium along with niacin, protein, phosphorus, and vitamin B6, not to mention choline, pantothenic acid, biotin, and potassium. Wow! Who knew one thing could have so much good in it…No wonder it’s a favorite among so many people. Okay, so these Salmon Burgers hit the healthy spot, but do they have flavor? Yes! These Salmon Burgers have a wonderful Latin flavor…Hope you give them a try…

Salmon Burgers
3/4 lb fresh or frozen wild caught salmon (defrosted)
1/2 tablespoon mayonnaise
1/2 tablespoon sour cream
1 teaspoon paprika
1 teaspoon cumin
1 teaspoon chili powder
3/4 teaspoon salt
1 teaspoon Dijon mustard
1 ripe Avocado
Cilantro Mayonnaise (recipe below)
2 cups Mixed Salad Greens
Cut the salmon into chunks and place in a food processor along with the mayonnaise, sour cream, spices & Dijon.Β Pulse the salmon a few times in the food processor until it combines.
Shape into two burgers. Heat a medium skillet over medium-high heat. Spray lightly with cooking spray or heat a little extra virgin olive oil. Cook the burgers about 4 minutes on each side on medium heat. Meanwhile prepare Cilantro Mayonnaise and slice the avocado.
Cilantro Mayonnaise
1/4 cup mayonnaise
1/4 cup fresh cilantro
1/4 teaspoon salt
1 lime, zest & juice
Combine the mayonnaise, cilantro, salt & lime zest along with the lime juice, in a small bowl. Mix well.
To serve: Place salmon burgers on mixed salad greens and top with sliced avocado and cilantro mayonnaise. Alternately you can place burgers on toasted burger buns and top with sliced avocado & cilantro mayonnaise.
