Tres Leches Cake is a favorite dessert in our house, as I have mentioned quite a few times. When my second son came home from Atlanta for a visit, I asked him what he wanted me to make for dessert. He asked for something with mango and lime. So that got me thinking, why not make our favorite dessert but flavor it with mango & lime? Here is what I came up with – and the best part was that when the time came to make it he decided to help! The results?Another winner!
Mango-Lime Tres Leches Cake
1 1/2 cup flour
2 teaspoon baking powder
1 teaspoon salt
3 eggs
1 cup sugar
2 teaspoon vanilla
1/2 cup whole milk
1 1/4 cup heavy cream
12 oz. evaporated milk
14 oz. condensed milk
1 teaspoon vanilla
2 cans Del Monte Diced Mangos, drained & rinsed
2 tablespoons Sicilia Lime Juice
Whipped Cream
Heat the oven to 350 °F. In a mixing bowl, sift the flour, baking powder and salt. In a larger mixing bowl, combine the eggs, sugar and vanilla. Beat on medium high for 5 minutes until fluffy and light yellow in color. Slowly mix in the whole milk and flour mixture, scraping the bowl well, until all is incorporated. Pour into a greased 13″x 9″ baking dish and bake in the oven for 25 minutes. Remove from oven and allow to cool for 20 minutes. Using a skewer, poke holes in the cake. While cake is in the oven prepare the milks. In a large bowl, using a whisk, combine the heavy cream, evaporated milk, condensed milk and vanilla. Reserve a few diced mangos for garnish and place the remaining mangos in a blender or food processor and process until smooth. Spoon mango puree into milk mixture. Stir in lime juice. Pour over cake immediately and allow to soak in; reserve any remaining milk-mango mixture. Refrigerate 4-6 hours until nicely chilled.
To serve: cut a square of Mango-Lime Tres Leches Cake, spoon on a bit of reserved milk-mango mixture, top with whipped cream and garnish with a few reserved diced mangos. This dessert will become a favorite in your house too. Enjoy!

Wow that looks so delicious and refreshing! I’m assuming the cake is moist, but since you put it in the fridge, does it change in texture?

It does become more dense but remains moist. It actually tastes even better the longer it soaks up the milks! Hope you enjoy it 😀💞
