Parmesan Turkey Sliders

Here we are again… Turkey leftovers! Every year I make the same mistake. I make more bird than the people I invite. Even after I’ve sent everyone home with an ample amount of leftovers, I still have leftovers! Well I know I’m not the only one because if you follow us you saw Linda’s awesome sandwich yesterday… here is how I used some of my turkey and the leftover dinner rolls too…

Parmesan Turkey Sliders
1 lb leftover turkey
1/4 cup Chardonnay
1 egg
1/2 cup bread crumbs
1/2 cup shredded Parmesan cheese
1/3 cup roasted garlic
1/4 cup mayonnaise
1/4 cup turkey stock
2 tbs dried oregano & sun dried tomatoes
salt and pepper
1 cup desired tomato sauce
3/4 Gouda cheese

Mix the turkey with the wine, egg, bread crumbs, Parmesan, roasted garlic, mayonnaise, turkey stock, dried herbs and add salt & pepper to taste. Form into little patties for a small dinner roll. Cook in olive oil on medium high until brown crust forms on each side and mixture is heated through.

On a baking sheet assemble turkey on one side and top with tomato sauce and Parmesan cheese. On other roll place a dollop of mayonnaise and the Gouda cheese.

Broil on high for 3 to 5 minutes until cheese is melted. Add some greens, plate and eat. Delicious!

    1. And there were plenty of those. I also used the stuffing to make a savory bread pudding. Not sure I’m going to post is since I just made a savory bread pudding.
