Pork Carnitas

I know, I know, Thanksgiving is right around the corner and I should be posting something I’m going to make for Thanksgiving but in my house it’s Taco Tuesday! My favorite day of the month and I just can’t help myself!! This is the time when I get to experiment with different flavors of tacos. On tonight’s menu are Pork Carnitas. Traditionally, Pork Carnitas are made with heavy cuts of pork such as shoulder or butt that are well seasoned and braised for several hours, then pulled apart. But today’s Pork Carnitas cook much quicker and are still just as delicious. Seasoned ground pork does its job well in these tasty tacos…A very quick and tasty meal today since Thursday we’ll be on our feet all day cooking…

Pork Carnitas
1 tablespoon extra virgin olive oil
1 Spanish onion, diced
4 garlic cloves, minced
2 lbs ground pork
1 tablespoon ground cumin
1 tablespoon dried oregano
1 tablespoon onion powder
1 tablespoon chili powder
2 teaspoons salt
1 orange, juice & zest
1/2 cup chicken stock
Package corn tortillas
1/2 cup sour cream
2 cups shredded Mexican cheese
2 limes
Handful fresh cilantro

In a large skillet, heat the olive oil. Sauté the onions and garlic on medium-high heat 5 minutes. Add the ground pork and sauté a few minutes. Sprinkle in the seasonings. Stir well and sauté until pork is no longer pink.

Pour in the fresh orange juice and the orange zest. Pour in the chicken stock. Bring to a boil; reduce heat and simmer, covered, on medium-low for at least 10 minutes to combine all those wonderful flavors and tenderize the pork. The longer you cook it the more the flavors will intensify and the pork will become even more tender. I typically simmer the pork for 30 minutes.

In the meantime, prep the toppings: quarter the limes, de-stalk the cilantro and heat the tortillas.

To assemble: Layer corn tortillas with sour cream, seasoned pork meat, Mexican cheese, cilantro & a squeeze of fresh lime. Enjoy these tasty Pork Carnitas that are simple yet delicious!
