Creamy Pumpkin Soup

This is the time of year when soup is just what the doctor ordered. This is a great soup to serve on Thanksgiving or just on a chilly Tuesday…

Creamy Pumpkin Soup
1 29oz can 100% Pure Pumpkin
2 cups onions diced
2 cups celery diced
2 large cloves garlic diced
1 Tbs olive oil
1 Tbs butter
3 cups chicken stock
1 cup cream cheese
1 tsp celery salt
salt and pepper to taste

In a sauce pot saute onions, celery and garlic until tender. Add pumpkin, celery salt and chicken stock.

Simmer together for 20 minutes then blend in a blender to make smooth. Return to sauce pot and finish with cream cheese. Stir until blended. Top with toasted pumpkin seeds.
